According to the Institute for Integrative Nutrition, superfoods are a class of the most potent, super-concentrated, and nutrient-rich foods on the planet. Superfoods have the ability to tremendously increase the vital force and energy of one’s body, and are the optimum choice for improving overall health – boosting the immune system, elevating serotonin production, enhancing sexuality, cleansing, lowering inflammation and alkalizing the body. In other words, we should strive to include superfoods in our diets, on a regular basis.
Did you know that raw chocolate is a superfood? In fact, Cacao is the #1 source of antioxidants, magnesium, iron, manganese and chromium. Raw chocolate improves cardiovascular health, builds strong bones, is a natural aphrodisiac, elevates your mood and energy and increases longevity. Chocolate is good for you and when buying it, be sure to purchase dark chocolate with the highest level of cocoa solids possible. Eat chocolate in moderation and you’ll receive all the health benefits it has to offer with absolutely no guilt.
This recipe is unbelievably easy and oh so delicious. You could kick it up a notch by adding a pinch of cayenne into the chocolate. While I’ve been having a love affair with Pecans, you could also use other nuts for a coating or skip it altogether.
Dark Chocolate Truffles
4, 3.5 ounce dark chocolate bars, chopped
3/4 cup heavy cream
3/4 cup toasted Pecans, ground fine
1/2 cup unsweetened Cocoa
In a pot, bring cream to a slow simmer then add in chocolate and stir until dissolved. Remove from heat and place in a shallow bowl. Cover and refrigerate for 2-3 hours until firm. Scoop out chocolate with a melon baller or tablespoon and form into 1″ balls then roll them into nuts or cocoa. Makes about 30 balls. You can store them in an airtight container for 3-4 days at room temperature or up to two weeks refrigerated.
