Agua Fresca is a light fruitful drink that’s popular throughout Mexico. It’s usually sweetened with sugar but honey works nicely here.
2-1/2 pounds of cucumbers, peeled
1 cup water
3 tbsp honey
3 sprigs of mint
Juice of 1-1/2 limes
pinch of salt
Working in batches, puree the cucumbers in a food processor. Transfer the puree to a fine-mesh sieve that’s been placed over a bowl. Apply pressure to the pulp to help with releasing all the juice. You should have around 3 cups of juice.
Meanwhile, combine the honey, mint and water in a small pan. Cook over low heat to dissolve the honey. Muddle the mint with a spoon to help release the oils. Whisk in the lime and salt. Remove from heat.
Combine the cucumber juice with the sweetened water. Serve over ice, adding a splash of sparkling water to each glass.
