Popcorn is an inexpensive whole grain, that’s easy to make and can serve as a healthier snack alternative.
3 tbsp Coconut Oil
¾ cup popcorn
2/3 cup of honey (preferably, local)
Zest of 1 orange
¼ tsp. Vanilla
Add the oil, popcorn and a pinch of salt to a large pot. Cover and begin to cook over medium high heat. You can shake the pot (carefully) on occasion as the kernels begin to pop which will keep the corn from burning. After the popping has ceased, remove from heat and let it cool. You’ll have at least 10 cups of popcorn.
Add the honey, zest, vanilla and ¼ tsp. salt to a small saucepan. Begin to cook over medium heat. Watch carefully. Once it begins to bubble up, whisk gently then remove from heat.
Pour the mixture over the popcorn. Once the honey has cooled down (about 10 minutes), oil your hands and begin to form into balls. You should end up with at least a dozen popcorn balls – depending on size.
