So, when you go and pick yourself up some of that delicious fish, use this salsa recipe to serve along with it. Fresh Pineapple (not canned or frozen) is loaded with compounds, minerals and vitamins that are essential for your body. It contains the enzyme bromelian which has anti-inflammatory, anti-clotting and anti-cancer properties. Eat it for optimal health.
1/2 of a whole Pineapple (about 2 cups), small dice
1/2 cup Red Onion, small dice
3 tbsp fresh chopped Cilantro
Juice of 1 Lime
2 tbsp Extra Virgin Olive Oil
1/2 tsp Salt
1/4 tsp Pepper
Combine above ingredients in a medium size bowl and serve. Makes about 2-1/2 cups.
