I’m so excited to tell you about this absolutely delicious recipe! It’s rare that I’m able to put ingredients together and have it come out perfect the first time around. Actually as I sit here and think about it, I’m not sure that’s ever happened!
What I do know for sure however, is that healthy food doesn’t have to be bland and boring. It can also taste amazing. In fact, tasty with lots of flavor is a must for me. Otherwise, why bother?
This recipe meets my criteria, hands down. The peppery arugula, the crunchy almonds, the sweet oranges and the creamy avocado all come together in one delicious bite. You could serve this for lunch or even dinner. Quinoa (KEEN-wah) is a grain that is rich in vitamins and minerals but most importantly it’s high in fiber so you will fill fuller, faster. This one is a keeper for me – give it a try and let me know what you think.
Quinoa bowl with Arugula, Oranges and Avocado
1 cup of Quinoa, rinsed
1-3/4 cup water
1/4 tsp salt, divided
2 Oranges, Segmented
4 big handfuls of Arugula
½ red onion, sliced thin
¾ Slivered Almonds
1 Avocado, sliced
Add the quinoa, salt and water to a small pan. Bring to a boil then reduce heat to low. Cover and cook until water has been absorbed and quinoa is soft – about 10 to 15 minutes total. Remove from heat and set aside. Add almonds to a small, dry skillet over medium heat. Watch carefully, turning them often until toasted. Mix three quarters of the almonds in with the quinoa, then stir in about ½ of the vinaigrette or until just moistened. Divide the quinoa between bowls, place arugula, oranges, avocados, red onions and remaining almonds on top of each. Finish each bowl with a drizzle of vinaigrette. Serves 4.
Juice of 1 orange
Juice of ½ a Lime
1 Tbsp White Wine Vinegar
¼ tsp salt
½ cup Extra Virgin Olive Oil
Combine first 4 ingredients into a glass measure then slowly whisk in the oil. Set aside.
