Sometimes when I share photos on Instagram I include a recipe. The recipes are usually so easy it’s hard to call them recipes. However, this one was pretty popular so I thought I’d share it with you this morning. Are you on Instagram? Let’s connect there too!
Easy Veggie Open Faced Sandwich
1 sprouted grain whole wheat muffin
1/2 Avocado sliced
2 tbsp chopped, radish
2 tbsp chopped, sweet yellow pepper
2 tbsp chopped, cucumber
1 tbsp chopped, red cabbage
1 tbsp chopped, onion
1 small handful of sprouts
Toast the muffin, spread each side with hummus and top with vegetables. You can use any vegetables of your choosing, these are just the ones I had on hand. I like to use multiple colors so I feel like I’m eating the rainbow. I got the sprouts from the local farmers market in Winchester, Va. I’m so happy warmer weather has arrived because I’ll now be able to buy most of my vegetables from those local markets. I’ve eaten this sandwich for breakfast, lunch and most recently dinner. I served them with a nice bowl of asparagus soup and me and my husband devoured them. What vegetables would you use on your sandwich?
